Enzymes that break down histamine
Histamine is a substance produced naturally by the body that is also found in a wide variety of foods. Foods that undergo a ripening process or are stored for long periods—such as sauerkraut, pickled fish, or well-aged cheese—are particularly high in histamine.
In the body, histamine is broken down by the enzyme DAO (diamine oxidase). This enzymatic process requires specific micronutrients as cofactors, particularly vitamin B6, copper, and zinc. In addition to its role as a cofactor, zinc contributes to normal protein synthesis. The body’s own enzymes, such as diamine oxidase (DAO), are also classified as proteins. The AH & Glutamine product developed by Biogena contains this specific combination of nutrients and supplements it with the amino acid L-glutamine and vitamin C.
